I was wondering how they figure out the percentages for certain hands for the poker tournaments on tv. Im doing a science project on the percentage a certain hand has to win against another hand but i cant find any charts on this topic. If you could provide me with any links or explain this to me i would appreciate it.

Not that it in any way answers your questions on how its calculated, but here's a link to an interesting win/lose calculator. Will see later on if Fat Tony calls me a dumbass for posting this link, but, hey, it's free and kind of cool and i'm not affiliated with the site by any means, so here goes.

Be careful of TV percentages. Sometimes they include cards mucked by players not seeing a flop and sometimes they dont.
