8 players each putting in $100. Idea is for one player to win the whole $800
Looking at wanting around 8-9 hours of play
What's the best amount for a Small and big blind to achieve this ?

8-9 hours seems excessive. I recommend a lot of beer. The blinds should be raised each hour or so. If you want to have it last 8-9 hours make it so players will be blinded out after about 4 or 5 hours (if all you do is post and fold you'll be gone after 5 hours). It might make it a little easier to play several smaller tourneys.
