In Phil Gordon's "Little Green Book", he talks about finding your percent of hitting your hand in hold'em (on the flop, # of outsx4, on the turn, # of outsx2). Is there anything like this for stud? Just a quick, easy bit of math to use when in the middle of a hand?

Unfortunately for Stud, it's a little harder because it depends on the number of upcards revealed and thus how many players are in the hand on each street.
But I will try and do some calculations in the next day or two to come up with something.
I do know that the chance of making a flush with 4 of a suit on 4th street is a little over 50% if you have full outs. Similar odds for an open-ended straight with a full 8 outs.

Diamond, that would be great if you could put together some kind of chart. Unfortunately, calculating Stud odds are so much more complex than holdem because there are about a gazillion more variables at play and all the information you need isn't staring you in the face -- in most cases, you have to remember what cards were folded two or three streets ago.

I have a question regarding stud... let's say it is a full stud table and everyon is in... 8x7 = 56 what happens? because 2 many cards are needed for all 8 players

One card is used as a "community" card for the players left in the hand.
