Ok, here it is, with a couple disclaimers.
1. For the fourth street and fifth street charts, I am assuming that any opponents not in folded on 3rd street, which may not always be true for the fifth street chart. These are rough odds.
2. The chart was created using a program which calculated the odds of an event not happening and subtracting that probability from one.
That is, I used this formula to find the probability of Event A.
P(A) = 1 - P(not-A)
3. To calculate your odds with one card to come, simply subtract the number of exposed cards from 52 and divide your number of outs by that number. For example, suppose you have two opponents, and all your other opponents fold on 3rd street. By 6th street, 19 cards have been exposed. If you have 9 outs, use the following division to calculate your odds.
P(A) = 9/(52-19) = 9/33 = 27.3%
Rough Odds for Draws on 4th Street
Number of Opponents
Outs 1 2 3 4
6 40.4 42.3 44.5 47.1
7 45.8 47.9 50.3 53.1
8 50.9 53.2 55.7 58.6
9 55.6 58 60.7 63.7
10 60.1 62.6
12 68.1
15 78
*Note that this chart assumes that your opponents do not catch any of your outs, so actual percentages are probably somewhat lower (refer to fifth street table)
Rough Odds for Draws on 5th Street
Number of Opponents
Outs 1 2 3
4 20.5 21.9 23.5
5 25.2 26.9 28.9
6 29.8 31.8 34.1
7 34.3 36.5 39.1
8 38.6 41.1 43.9
9 42.8 45.5 48.5
10 46.8 49.7 52.9
12 54.4 57.6 61.2
15 64.7 68.2 72.1
*Note that this assumes opponents not in the hand folded on 3rd street, and that none of your opponets catch your outs on 6th street (refer to the one-card odds)
Edit: I apologize for the poor formatting. It was copied from excel, so you may want to copy the columns back into a spread sheet.

Again, when it comes to calculating your odds on the fly in 7 Stud ... well, just remember it ain't hold-em. It's very complex and extremely situation-dependent.
