I've played quite a lot of games online, but I have only recently started making notes on other players.
What kind of things do you guys make notes on?
I've been making notes on whether people play a lot of hands, what kind cards they raise with and call with, the amounts they raise.
Is there anything else I should be taking notes on?

why note how much they raise? 
Just curious.
Um... I also note whether they call continuation bets, how often they like to play back at me and whether they call down big pots (meaning I should value bet) or whether they fold them (meaning I should bluff more)

As for noting how much they raise, I do this when I've seen their cards. It gives me an idea of how much with certain hands (I note it as 3xbb for example)

i note five things.
1. The stake table level and whether it was a cash game or torny.
2. their pre-flop starting requirements in relation to position.
i.e K8 suited late position
3. how agressive they are
i.e had top pair on flop and made pot-sized bet.(this would be a 6)
4. general skill level.
i.e 2/10 (because they called a 20Xbb bet preflop with a pocket three's)
5. How tight/loose they are.
I have various requirements which all fall into a catogory between 1-9.
Cash games have a letter requirement. i.e D=$1/$2
therefore my notes could look like this
D672
KQ suited early raised 4xBB
A7 suited late called
this means i observed the player on $1/$2 cash table
general skill level is 6/9-in my opinion
Agressiveness is 7/9-this means will happily raise BIG
tightness is 2/9-therefore plays very tight.
I would try and stay clear of this player!
(THIS IS NOT A PERFECT SYSTEM, BUT WHEN DECIDING WHICH TABLES TO PLAY ON, I LOOK FOR LOTS OF (for example) A277 or B148, as these players are loose, aggressive and in-experienced.

Sounds supergood to me as well 
My notes however are not they systematized. I gerenally try to note peculiarities, which certain players have. For instance, how long it takes them to make a decision, when they fold, how good I would say they are, percentage of bluffs. Things like that. Guess still a lot is missing...

just be very careful when taking notes on this. What you consider to be a good hand, someone else my consider it to be bad or visa versa.
for example. lets say the flop is Ak3 all hearts. your opponant is holding k7 spades giving him middle pair, he then bets big because he likes his hand. Do you perceive this as a bluff, semi bluff or genuine bet? To him, this hand is good, to you it's poor.
In this position, you may check or fold as you're scared someone has a flush or even ace. To them they think xmas has come early!!!!
You consider this as a bluff-to them it's not.
This is not the best example, but i hope it makes sense,
