I just watched an episode of High Stakes Poker and Lindgren and Elezra(sp) just played a hand and Eric was all in, and they did the river card twice... What is this about?

It's called "Running it twice". They do this to reduce the variance.

To explain further, at the point where they are all in the 2 players sometimes agree to 'run it twice'.
This means to win the pot, either player must win both times. if one wins one and the other wins the next then the pot is split.
If for example one player has on overpair, like say AA and the other a flush draw, it helps reduce the pain of a drawout. i.e. The flush would have to hit both times for the drawer to win the full pot.
You can run the whole or part of the board as many times as both agree.
If you watch HSP a lot you will see this crop up a lot if it's a huge pot with an all in.
Some players players, Bary Greenstien for example, don't like to run it more than once, whereas others, Sam Farha, Eli elezra will almost always ask/offer it.

A lot of high stakes players don't want to break each other so by running it twice makes it more likely that they'll chop instead of one of them winning the whole pot. It protects them so that they're less likely to go broke and it protects the other player so they can keep playing.
