what do you do when...

Suppose you have a really good hand, say, a King high flush with no pair on board. There's another player who you know also has a very good hand, but you're not sure if it can beat yours. You just want to call it all the way to the river, except a maniac, who you're pretty sure just has 2 pair or a set, who keeps betting, and the player you put on a good hand keeps raising him?
If you fold a winning hand, you're going to be furious because the maniac made you throw away the winning hand. At the same time, if you stay in and lose you're going to be just as angry because the manaic made it so expensive for you to play.
Seems to me like you're damned either way.

Call one raise and tell him "I hope you can beat a high straight"

Re-Raise over the top and see how the guy you're worried about reacts.

He'll be expecting the Maniac's raise, but how he reacts to you re-raising could give you enough info to put him on the Nut flush or not.

Even the very best players lay down the best hands sometimes. It happens. If you think you are beat, muck em.... or reraise allin Laughing
