Is there a standard (obviously it's going to vary... but generally speaking) by which one should consider themselves Pot Committed?
Would it be simply when more than 2/3's of your stack is in the pot? Or are there more ccomplex things that need to be taken into account... such as your hand odds and such?

Peronally, and I don't know if its the right way, but I never think about being Pot Committed. The name itself sounds like when your in so deep you must go all the way. I've been in with a good portion of my chips with a straight when on the river, I knew the guy had caught his flush.
I can't tell you how I knew but I knew.
I folded to play another hand.
That being said, I think there are times where , if you take into account your hand, how the other guys have been playing, the size of the pot, you might as well see it out. But only if you think you are going to win, or have a pretty good change to do so. If you don't think you are going to win, fold!

In my mind, the only way to be "pot committed" is if the pot is huge compared to your remaining stack, and you have some sort of a hand, or chance of winning. Saying "well, I've already put 30 bucks in this pot" is not the greatest way of thinking. But, if you have, there are two callers, and you've only got 2 bucks in front of you... well, there's virtually no hand that you should lay down there. You're getting 50 to 1 pot odds at that point in the hand. I'd be hard pressed to find a situation on the flop where you're that much of a dog to win a pot. Granted, it's an extreme situation, but it's just to illustrate the point I'm trying to make.
