I understand the kicker breaks the tie but in hold 'em do you use the other card in hand, or the best 5 of all seven board cards?

You make your best five card hand so I'll give an example.
You: Q3
Opponent: Q8
Flop: K, A, J
Turn: 5
River: 2
So the opponent's BEST five-card hand is...AKQJ8
Your best five card hand is...AKQJ5
Since your 3 is obviously lower than the 5, you must play the five. WHEREAS, your opponent plays his 8 and thus, has the best hand.
Ok, now the pot would split in a scenario like that.
You: J10
Opponent: QJ
Flop: A77
Turn: 7
River: K
So, your best hand, as well as your opponent's is...
AA77K The King is higher than the J and Q obviously, and pairs are better than high cards, so you would split the pot. It can get pretty complicated, no doubt about it. But in some situations it can be pretty helpful if you are trying to steal a pot.
