I am fairly new to Holdem.I 've seen people put a chip on there cards.What does this mean.

It just means you are stil in. You have not folded or taken action yet. Many casino dealers will fold your cards if there is nothing on them. Happens in Vegas and Reno. Hasn't happened much in AC from what I've experienced.

A lost of people also use little knick-knacks, it's all the same.

Not only does it indicate that you are still in the hand, it protects your hand too. I have seen players throw their cards into the center, and if they miss and hit another players cards, BOTH hands are dead if that hand is not protected.
