Say you are holding KJ and the flop comes 479. You are holding 2 overcards because both King and Jack are over 4, 7 and 9.

...or likewise any cards on the board higher than the pair you hold. E.g. "I had pocket jacks, but of course two overcards came on the flop and I had to fold."
Or online style: "With 3 overcards on the board, I knew I was setting them up perfectly for a trips suckout on the river!" :D
