...how do casinos take the rake during play?

I understand that they will take a percentage but how clinical is it? Do they round it up/down etc. Does this tend to cause delays in the action whilst they are calculating the rake for that hand etc.

You usually wont notice them take it. They are sneaky. As players are deciding on what to do the dealer usually does a rough count of the pot and figures out what to take. Usually the max. IF the pot is not big enough for a full rake, at the casino i play at, then the dealer waits till the end of the hand and counts it up and takes the smaller rake. It does not take long and does not take away from the game. Believe me you wont notice.

Do they use the racks in front of them for the rake or do they tend to scoop it down a hole out of sight?

Just out of interest what sort of percentages are you looking at?

At some places they stack the raked chips over a little trapdoor thing and then at the end of the hand drop them into oblivion.

I believe that they charge a seat rental rather than a rake in UK casinos.

Does the dealer pull an oversized comedy lever while laughing manically? :D

As for the question I have no idea I only play tourneys in casinos.

I can't answer that I'm afraid. The poker scene in the UK is far smaller than in the US - and limit poker is a rarity. Pot Limit is the most common with No Limit growing in popularity.

Often games will beheld at casinos a few nights a week. Regular everyday card rooms are numbered less than 10 in the whole country.

Played at a poker club on saturday. Self delt cash games charged a flat chair rental of £3 an hour. On the dealer tables there was a rake of 5%.

PL and NL dominate the UK scene - most people are pretty unimpressed by Fixed limit.
