Questions for dealers [and perhaps knowledgeble players]

1: why do dealers tap the table when they begin dealing? If you watch dealers, when they go to deal flops, turns and rivers, they close a fist and tap the table twice w/ the non-deck hand, burn, then deal.

I can understand the burning incase the cards are marked or something, but why the table-tap? Is it to show y'got nothing up your sleeve or something?

2: what's the general protocol if a burn card is accidently revealed or if a players sees it while it's being dealt? w/ the guys I play w/, some of them are really bad about burning, so I suggested leaving the burn-card face up and dealing the turn/river as it should have been--after they contribute to the pot as a penalty.

I have no idea why the dealers tap the table but someone here will know. As far as a burn card being exposed, the games I've played in any card that is shown that was not meant to be seen we treat it just as that, an exposed card that we either leave up or announce it out-loud that the K of hearts is exposed or whatever the card.

To the best of my knowledge, the dealer taps the table with a closed fist to show that he has no cards in his dealing hand and not cheating anyone.

If the burn card is exposed, it must be revealed to all players and can still be used as the burn card. Having the burn card makes it more difficult for players to get a glimpse of the card next dealt, if that is even possible, probably can be with a sloppy dealer or at a home game. A penalty should not be enforced against someone accidently flipping over a burn card, that happens..

The close fist tap, as Sundance has pointed out, is to show that the dealer is not "palming" a card.

I have no first hand knowledge as to what it means, so I would defer to those above who sound as if they actually do know. But might it just be a signal that the betting for that round is done and they are about to deal the flop, turn, river or whatever? Seems if it was to show they didn't have a card in their hand that an open palm face up would work better...
Like I said, don't know, just guessing.

The betting in holdem is structured enough that a dealer would not have to make a signal to close betting like they do in roulette...'the wave' It is definitely to show that he is not palming a card, and it is very difficult to palm a card in your fist, try it sometime.. :D

Yep...there are magicians who can show you an open palm and be holding a card on the back of their hand...and I don't even want to KNOW how they do it.

By the way, don't think this is to protect you. This is done for the cameras--so that the casino can protect itself. From cheating dealers or from palyer accusations that their dealers are cheating. Remember, it's more likely that a cheating dealer will steal from them than from us. They've got a hell of a lot more money!
