They are thicker and they interlock. there is a big difference.. IMO

They only interlock when there are no chips in them.

Say what? Without chips in them, they just sit on one another and will slide off. I don't see any interlocking when the racks are empty. But maybe I'm missing something.
My Paulson racks are a smaller footprint, more rounded edges, and thicker plastic than cheaper racks I have (though there are probably other styles out there... it's hard to tell from eBay pix). The Paulson's have a quality feel, and they have molded "guides" underneath so one rack fits almost perfectly on top of another-- when the rack is full of chips.
The only thing to be careful of with Paulson racks is that they are made with very exacting tolerances. They will fit 20 Paulson chips in each row but very tightly! I have some Bud Jones and RTP chips that won't fit 20 in a row, and some cheap plastic chips that are also a little bit too thick.
I don't know if the person I bought from has more. Maybe somebody will reply with some stock of them.

They interlock side by side.. they have posts on one side and holes on the other. I stack all my bud jones on them, including the Borgata's I just picked up and they fit 20 in a row perfectly. Maybe the one you have is a different style? They are pretty meaty sized racks. Almost look twice the size compared the to standard $1.50 racks I see around. Although I am starting to notice that a lot of casinos are starting to use the cheap racks too.

Yeah, very interesting racks. I've never seen those before. Not the usual Paul-son racks.
But damn fine chips!!

There are probably a few styles of Paulson racks.

The Paulson racks I own also hold the chips more snugly than the generics. That is, the curvature more snugly fits the diameter of a 39mm chip. Chips just don't fall out of those racks as easily.

Not that I'm a thief or anything, nor am I suggesting doing this, but how hard would it be to "sneak" a couple racks out of your local casino.
I was looking at the racks at our card club and they are nice "Bud Jones" ones. (And they are laying all over the damn place) (although there is a camera on the ceiling for every chip rack on the floor!
